 Here's a quick explanation on what each of Nitrogen (N), Phosphorus (P) and Potassium (K) are for.  

Nitrogen (N) is what is needed to aid in the growth of the plant itself and is the main source that underground and leaf vegetables need,

Phosphorus (P) helps in root growth and establishment,

Potassium (K) helps set the flowering vegetables, a lack of Potash will see your flowers fall off and will end in a scarce crop.

If using wood ash make sure you also add something like green manure for the Nitrogen.
